Hash Brown Quiche
Ingredients
- 4 cups Mr. Dell's Original Potato Shreds, thawed
- 1/4 cup melted butter or margarine
- 1 cup shredded hot pepper cheese
- 1 cup shredded Swiss cheese
- 10 slices bacon (fried and crumbled)
- 1 cup half & half
- 2 eggs
- Pinch of salt
Instructions
- Grease pie plate with solid shortening.
- Press Mr. Dell's Potatoes between towel to remove excess moisture.
- Press potatoes into pie plate bottom and sides and brush with melted butter.
- Bake this shell at 425º F for 25 minutes or until slightly brown.
- Remove from oven and fill with layers of cheese and bacon crumbles.
- In separate bowl mix half & half, eggs, and salt, and pour this mixture over the top of cheese and bacon.
- Reduce oven heat to 350º F and bake quiche 30 to 40 minutes or until knife inserted near edges comes out clean
