Beef & Potato Salad
Ingredients
- 8 cups Mr. Dell's Southern Style
- 1 lb. cooked lean beef round, well-trimmed
- 3 tablespoons wine vinegar
- 3 tablespoons sherry
- 2 tablespoons ketchup
- 1 teaspoon prepared mustard
- 1/4 cup sliced fresh mushrooms
- 1/2 cup plain yogurt
- Lettuce leaves
Instructions
- Cut beef into 1/2-inch cubes.
- In large bowl, combine beef, vinegar, sherry, ketchup, and mustard; marinate overnight in refrigerator, stirring occasionally.
- In two tablespoons of oil, cook meat in skillet until tender and brown.
- Cook Mr. Dell's Potatoes in lightly salted water at low boil, 8-10 minutes.
- Drain and cool in cold water.
- Add potatoes, mushrooms and yogurt to cooked meat mixture.
- Toss gently to mix well. Chill.
- Serve on lettuce leaves.
- Makes 6 servings.
