Hot Chinese Potato Stir-Fry
Ingredients
- 8 cups Mr. Dell's Southern Style
- 4 tablespoons vegetable oil
- 1 cup each carrots & celery, thinly sliced on the diagonal
- 1/2 cup green pepper strips
- 1/2 cup sliced mushrooms
- 1 clove garlic, minced
- 2/3 cup water
- 3 tablespoons soy sauce
- 2 tablespoons corn starch
- 1 large tomato, cut in thin wedges
- 1/3 cup sliced green onions
Instructions
- In wok or large skillet, heat 2 tablespoons of the oil.
- Add Mr. Dell's Potatoes, cook and stir over medium-high heat 12 to 15 minutes until barely tender. Remove and keep warm.
- Add remaining oil to wok, then carrots, celery, pepper, mushrooms, and garlic.
- Cook and stir three to four minutes until crisp-tender.
- In small bowl combine water, soy sauce, and corn starch.
- Return potatoes to wok with corn starch mixture.
- Cook and stir about two minutes, just until sauce thickens and mixture is heated through.
- Spoon onto platter; garnish with tomato and onions.
- Makes 8 servings.
- Can be served with steamed rice if desired.
