Beef & Potato Salad
Ingredients
8 cups Mr. Dell's Southern Style
1 lb. cooked lean beef round, well-trimmed
3 tablespoons wine vinegar
3 tablespoons sherry
2 tablespoons ketchup
1 teaspoon prepared mustard
1/4 cup sliced fresh mushrooms
1/2 cup plain yogurt
Lettuce leaves
Instructions
Cut beef into 1/2-inch cubes.
In large bowl, combine beef, vinegar, sherry, ketchup, and mustard; marinate overnight in refrigerator, stirring occasionally.
In two tablespoons of oil, cook meat in skillet until tender and brown.
Cook Mr. Dell's Potatoes in lightly salted water at low boil, 8-10 minutes.
Drain and cool in cold water.
Add potatoes, mushrooms and yogurt to cooked meat mixture.
Toss gently to mix well. Chill.
Serve on lettuce leaves.
Makes 6 servings.
